Wasabi (2539 N. Milwaukee Ave.) is still the reigning champ in both mine and Jill’s books when it comes to Ramen – absolutely no question. Their Tonkotsu Ramen is what they are most known for and has that rich, layered, complex broth that makes the dish so incredible. Another option on their menu, however, brings just about the same amount of enjoyment but with a “lil’ kick!”
The same fresh veggies and proteins come in this version of their delicious noodle dish as their Tonkotsu preparation. It’s hard to explain, but there is a textural uniqueness to the “soup” that I’ve never experienced. There’s a really light “dusty” element to the liquid itself that’s enjoyable and keeps you coming back for another taste of the rich broth. I unfortunately do not know what gives it this quality. I am proud to say that once again, Wasabi remains the reigning champ of Ramen.
